Asparagus and tomato pasta recipe

Ingredients

  • 8 ounces whole wheat pasta.
  • 1 tablespoon olive oil.
  • 1 tablespoon minced garlic.
  • 1 pound fresh asparagus, cut into 1-inch pieces.
  • 1 cup grape tomatoes, halved.
  • 2 small zucchini, diced.
  • Feta cheese.
  • Pepper to taste.

Directions

  • Cook pasta according to package directions.
  • Heat oil in a large skillet over medium heat. Add asparagus and garlic. Cook for 5 minutes.
  • Add zucchini and cook for 3-5 minutes until vegetables are tender and crisp.
  • Add tomatoes and cook until tomatoes are heated through, about 2 minutes.
  • Sprinkle with pepper and feta cheese. Serve on top of cooked pasta.
