ST. GEORGE — Springdale, the gem of Zion Canyon, is also a mecca for great restaurants. In this episode of “What’s on the Menu,” host Sheldon Demke and Monica McGlochlin, host of the midday show on 99.9 KONY Country, took a drive to the charming town to dine at the Spotted Dog.
The Spotted Dog is located within Flanigan’s Resort, a boutique destination eco-resort serving guests from around the world since 1984. This fine dining establishment offers dishes inspired by the surrounding natural beauty that feature locally farmed organic produce, sustainably harvested fish and more.

They started with the charcuterie board, a delightful mix of nibbles that includes toasted baguette, smoked duck and trout, Utah-based cheeses, dried cherries, organic grapes and candied walnuts. Adding an extra zing of flavor are whole-grain mustard and blackberry compote.
Next came the New Zealand lamb shank. Slowly braised for up to six hours and finished with a mushroom demi-glace, it was accompanied by roasted potatoes and seasonal vegetables.
“The lamb was a must-try. That was an experience to have on its own,” McGlochlin said. “It comes out and it is fork-tender, just falls on your fork.”
Seafood lovers will delight in the Spotted Dog’s Rocky Mountain red trout. Finished with lemon butter and served with wild rice and seasonal vegetables, you can enjoy it as an entrée or on top of a salad for a protein boost.
The Spotted Dog also boasts an award-winning wine cellar with hundreds of bottles that showcase the best vineyards throughout the region and across the globe. In fact, they’ve been recognized every year since 2009 by Wine Spectator magazine with the “Award of Excellence.”
